Vegan Banoffee Nice Cream with Homemade Caramel
Ingredients
Nice cream
- 2-3 frozen bananas
- 2 teaspoons maca powder
- 1/4 teaspoon vanilla paste or extract
Caramel sauce
- coconut cream
- coconut sugar (use in 2:3 ratio by volume)
Preparation
Blend the frozen bananas, maca powder, and vanilla extract until smooth.
For the caramel sauce, simmer coconut cream and coconut sugar in a 2:3 ratio in a saucepan for approximately 20 minutes until thickened, then refrigerate to thicken further.
Top the blended nice cream with banoffee caramel pot, banoffee pie bar, stem ginger granola, the homemade caramel sauce, vanilla coconut yogurt, and dark chocolate chips.
