Vegan Buckwheat Crepes

Ingredients

  • 2 1/4 cup buckwheat flour
  • 3 cups water
  • 1/2 tsp salt

Preparation

  1. In a large mixing bowl, whisk together the flour, thickened flax egg & salt. slowly stir in the water until you have a smooth batter with no clumps. cover the batter & let rest in the fridge for at least 2 hours (I made my batter in the morning, then let rest until dinner). batter should have the texture of melted ice cream

  2. Heat a LARGE pan over med-high heat with a spritz of olive oil. make the first TEST CREPE (first crepe always a test) by pouring 1/3 cup batter into the center of the pan, then rotating the pan quickly to spread. brown on each side 1-2 mins. this recipe made 10 crepes in total for me (including the test crepe)
