Vegan Rocky Road Breakfast Cupcakes
Ingredients
- 2/3 cup oats
- 1 banana
- 1-2 tbsp sugar or sweetener
- 1 tbsp flaxseed
- 2 tbsp cacao powder
- 1/2 tsp vanilla
- squeeze of lemon
- pinch of salt
- 5 tbsp plant milk
- 1/2 tsp baking powder and soda
- handful of raisins
- vegan mini marshmallows
- flaked almonds
- vegan dark chocolate chips
- vegan white chocolate chips
Preparation
Blend the oats first.
Add the remaining ingredients for blending: 1 banana, 1-2 tbsp sugar or sweetener, 1 tbsp flaxseed, 2 tbsp cacao powder, 1/2 tsp vanilla, squeeze of lemon, pinch of salt, 5 tbsp plant milk, 1/2 tsp baking powder and soda, and blend.
Stir in a handful of raisins.
Top with vegan mini marshmallows, flaked almonds, and vegan dark or white chocolate chips.
Bake for 12-15 minutes at 180°C fan oven.
