Vegan Rocky Road Breakfast Cupcakes

Ingredients

  • 2/3 cup oats
  • 1 banana
  • 1-2 tbsp sugar or sweetener
  • 1 tbsp flaxseed
  • 2 tbsp cacao powder
  • 1/2 tsp vanilla
  • squeeze of lemon
  • pinch of salt
  • 5 tbsp plant milk
  • 1/2 tsp baking powder and soda
  • handful of raisins
  • vegan mini marshmallows
  • flaked almonds
  • vegan dark chocolate chips
  • vegan white chocolate chips

Preparation

  1. Blend the oats first.

  2. Add the remaining ingredients for blending: 1 banana, 1-2 tbsp sugar or sweetener, 1 tbsp flaxseed, 2 tbsp cacao powder, 1/2 tsp vanilla, squeeze of lemon, pinch of salt, 5 tbsp plant milk, 1/2 tsp baking powder and soda, and blend.

  3. Stir in a handful of raisins.

  4. Top with vegan mini marshmallows, flaked almonds, and vegan dark or white chocolate chips.

  5. Bake for 12-15 minutes at 180°C fan oven.
