Beetroot Oatmeal with Fruit Toppings
Ingredients
- 1 cup oats
- 1 cup coconut milk
- 1 1/2 cup water
- 1/2 mashed banana
- 1/2 baked beetroot
Toppings
- soy yogurt
- blueberries
- cherries
- cacao nibs
Preparation
Bake the beetroot at 180 degrees Celsius for 45-60 minutes, then allow it to cool and peel it easily.
Mash half of the beetroot with a fork.
Add all the other ingredients to a pot along with the mashed beetroot.
Cook for 10 minutes on medium heat.
Serve with your favorite toppings and enjoy.
