Beetroot Oatmeal with Fruit Toppings

Ingredients

  • 1 cup oats
  • 1 cup coconut milk
  • 1 1/2 cup water
  • 1/2 mashed banana
  • 1/2 baked beetroot

Toppings

  • soy yogurt
  • blueberries
  • cherries
  • cacao nibs

Preparation

  1. Bake the beetroot at 180 degrees Celsius for 45-60 minutes, then allow it to cool and peel it easily.

  2. Mash half of the beetroot with a fork.

  3. Add all the other ingredients to a pot along with the mashed beetroot.

  4. Cook for 10 minutes on medium heat.

  5. Serve with your favorite toppings and enjoy.
