Coconut Oat Porridge with Chia Seeds

Ingredients

  • 1 can coconut milk
  • 1 cup jumbo oats (I use @flahavansuk)
  • 2 tbsp chia seeds
  • 2 tbsp maple syrup
  • 1/4 cup water
  • Berries to serve
  • Blueberry compote to serve
  • Flaked coconut to serve

Preparation

  1. Mix the coconut milk, oats, chia seeds, water, and maple syrup in a pan and cook over medium heat for about 7 minutes to achieve a thick porridge.

  2. If you want a less thick porridge, add a little more water.

Serving suggestions

  1. Serve with berries, blueberry compote, and flaked coconut.
