Classic Plate of Brekkie Hash

Ingredients

  • 2 potatoes, shredded (white or sweet potatoes can be used)⠀
  • 1/4 teaspoon salt⠀
  • 1/2 teaspoon freshly ground black pepper⠀
  • 6 cloves garlic, minced⠀
  • 2 to 3 large kale leaves, shredded⠀
  • pinch of salt⠀

Preparation

  1. Begin by preheating your oven to 375F, and rinse your shredded potatoes. Pat them dry, and toss them with your salt and pepper.⠀

  2. Spread out your tatoes on a baking sheet, and bake these for 10 minutes. Toss your baked potatoes with minced garlic, and spread them back on the mat to be baked for 5 minutes more.⠀

  3. Slice or shred your kale, and begin to saute in a pan with water and a pinch of salt to cook. Once softened, set aside too cool.⠀

  4. Plate up your baked potatoes, serve with kale, and enjoy
