Creamy Vegan Pesto Chickpea Smash
Ingredients
Cashew hemp basil pesto
- 2 big handfuls basil
- handful of spinach or other greens
- 1/2 lemon, juiced
- 1 tablespoon extra virgin olive oil (optional)
- 1/4 cup hemp seed
- 1/4 cup raw cashews
- 1/8 cup pine nuts
- 3 tablespoons nutritional yeast (optional)
- 2 teaspoons garlic granules or garlic powder
- 1/2 teaspoon salt and pepper
- pinch of cayenne or crushed red pepper
- 1/2 teaspoon raw agave
- 2-3 tablespoons water as needed
Pesto chickpea smash
- chickpeas
- cucumber
- green onion
- pesto
Preparation
Pesto
Add all ingredients to a blender.
Purée until super smooth and creamy, adding water one tablespoon at a time until desired consistency is reached.
Chickpea smash assembly
Mix the chickpeas, cucumber, green onion, and pesto together.
Serve on a toasted slice of gluten-free vegan bread with spinach, crunchy chickpeas, toasted pine nuts, and sliced tomatoes.
