Creamy Vegan Pesto Chickpea Smash

Ingredients

Cashew hemp basil pesto

  • 2 big handfuls basil
  • handful of spinach or other greens
  • 1/2 lemon, juiced
  • 1 tablespoon extra virgin olive oil (optional)
  • 1/4 cup hemp seed
  • 1/4 cup raw cashews
  • 1/8 cup pine nuts
  • 3 tablespoons nutritional yeast (optional)
  • 2 teaspoons garlic granules or garlic powder
  • 1/2 teaspoon salt and pepper
  • pinch of cayenne or crushed red pepper
  • 1/2 teaspoon raw agave
  • 2-3 tablespoons water as needed

Pesto chickpea smash

  • chickpeas
  • cucumber
  • green onion
  • pesto

Preparation

Pesto

  1. Add all ingredients to a blender.

  2. Purée until super smooth and creamy, adding water one tablespoon at a time until desired consistency is reached.

Chickpea smash assembly

  1. Mix the chickpeas, cucumber, green onion, and pesto together.

  2. Serve on a toasted slice of gluten-free vegan bread with spinach, crunchy chickpeas, toasted pine nuts, and sliced tomatoes.

Tips

  1. Use the pesto as a sauce on pasta or a spread on sandwiches.
