Easy Peasy Oatmeal Cookies
Ingredients
- 1 1/4 cups gluten free rolled oats
- 1/4 cup gluten free oat flour – if using homemade oat flour, make sure it’s very finely ground (not coarse)*
- 2 1/2 tablespoons ground flaxseed
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/8 teaspoon ground cloves
- 1/4 teaspoon salt
- 3 tablespoons melted coconut oil
- 1/4 cup unsalted, natural creamy almond butter (i used pb bc that’s all i had—if using pb with salt, omit the 1/4 tsp salt in the recipe)
- 1/4 cup coconut sugar
- 1/4 cup pure maple syrup
- 1 teaspoon pure vanilla extract
Preparation
Preheat oven to 350 degrees & line a baking sheet w parchment paper
In a large bowl, mix the dry ingredients
In another large bowl, whisk together the wet ingredients
Mix the contents of one bowl w the other and fold to combine
Roll into small balls & bake for 10-15 minutes. Mine took 13 minutes
