Easy Peasy Oatmeal Cookies

Ingredients

  • 1 1/4 cups gluten free rolled oats
  • 1/4 cup gluten free oat flour – if using homemade oat flour, make sure it’s very finely ground (not coarse)*
  • 2 1/2 tablespoons ground flaxseed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/8 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 3 tablespoons melted coconut oil
  • 1/4 cup unsalted, natural creamy almond butter (i used pb bc that’s all i had—if using pb with salt, omit the 1/4 tsp salt in the recipe)
  • 1/4 cup coconut sugar
  • 1/4 cup pure maple syrup
  • 1 teaspoon pure vanilla extract

Preparation

  1. Preheat oven to 350 degrees & line a baking sheet w parchment paper

  2. In a large bowl, mix the dry ingredients

  3. In another large bowl, whisk together the wet ingredients

  4. Mix the contents of one bowl w the other and fold to combine

  5. Roll into small balls & bake for 10-15 minutes. Mine took 13 minutes
