French Toast Brunch

Ingredients

  • 1/4 cup chickpea flour
  • 1 tsp vanilla extract .
  • 1 tbsp maple syrup
  • 1 tbsp nutritional yeast
  • 1 cup nut milk
  • 6-7 slices thick dense drier bread •
  • 1/4 cup frozen cherries .
  • 1 cup frozen blueberries .
  • juice from 1/2 lemon
  • 2 tbsp sugar
  • 2 tsp corn starch + water .

Preparation

  1. Mix the batter ingredients together in a wide dish (I suggest blending to make xxxtra liquidy & thin), soak each bread slice in & cook in a large pan over med heat for 2-3 mins each side until browned. I didn’t experience any sticking so no need to oil the pan

  2. For the jam topping, heat berries (frozen cherries & blueberries) in a pot over med-high heat for 6 mins until berries start to get mushy. turn heat to med-low, add lemon juice & sugar, then simmer for 3 more mins until berries fully burst. stir in the corn starch slurry & simmer until the berry compote gets to desired glossy & viscous consistency
