French Toast Brunch with Homemade Berry Jam

Ingredients

  • 1 small mashed banana
  • 1/4 cup chickpea flour
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tbsp nutritional yeast
  • 1 tsp cinnamon, nutmeg and pinch of salt
  • 1 cup nut milk
  • 6-7 slices thick dense drier bread
  • 1/4 cup frozen cherries
  • 1 cup frozen blueberries
  • juice from 1/2 lemon
  • 2 tbsp sugar
  • 2 tsp corn starch plus water

Preparation

  1. Mix the batter ingredients together in a wide dish, blending for extra liquidy and thin consistency.

  2. Soak each bread slice in the batter and cook in a large pan over medium heat for 2-3 minutes per side until browned; no need to oil the pan as it did not stick.

  3. For the jam topping, heat frozen cherries and blueberries in a pot over medium-high heat for 6 minutes until berries start to get mushy.

  4. Reduce heat to medium-low, add lemon juice and sugar, then simmer for 3 more minutes until berries fully burst.

  5. Stir in the corn starch slurry and simmer until the berry compote reaches desired glossy and viscous consistency.
