French Toast Brunch with Homemade Berry Jam
Ingredients
- 1 small mashed banana
- 1/4 cup chickpea flour
- 1 tsp vanilla extract
- 1 tbsp maple syrup
- 1 tbsp nutritional yeast
- 1 tsp cinnamon, nutmeg and pinch of salt
- 1 cup nut milk
- 6-7 slices thick dense drier bread
- 1/4 cup frozen cherries
- 1 cup frozen blueberries
- juice from 1/2 lemon
- 2 tbsp sugar
- 2 tsp corn starch plus water
Preparation
Mix the batter ingredients together in a wide dish, blending for extra liquidy and thin consistency.
Soak each bread slice in the batter and cook in a large pan over medium heat for 2-3 minutes per side until browned; no need to oil the pan as it did not stick.
For the jam topping, heat frozen cherries and blueberries in a pot over medium-high heat for 6 minutes until berries start to get mushy.
Reduce heat to medium-low, add lemon juice and sugar, then simmer for 3 more minutes until berries fully burst.
Stir in the corn starch slurry and simmer until the berry compote reaches desired glossy and viscous consistency.
