Mini Banana Pancake Swirls with Chocolate
Ingredients
- 1 ripe banana, mashed
- 1 egg or 1 flax egg
- 2 tablespoons flour
- pinch of baking powder
Garnishes
- additional bananas
- chocolate
- yoghurt
Preparation
Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all the ingredients except for the garnishes
Heat a non-stick pan and pour the batter using a teaspoon to form mini pancakes, optionally adding a small amount of coconut oil if frying
Use a piping bag to form the batter into swirls if desired
Cook each side until they turn golden-brown
After making the mini pancakes, add bananas, chocolate, and yoghurt
