Mini Banana Pancake Swirls with Chocolate

Ingredients

  • 1 ripe banana, mashed
  • 1 egg or 1 flax egg
  • 2 tablespoons flour
  • pinch of baking powder

Garnishes

  • additional bananas
  • chocolate
  • yoghurt

Preparation

  1. Prepare the pancake batter by mashing the banana with a fork, beating the egg, and mixing all the ingredients except for the garnishes

  2. Heat a non-stick pan and pour the batter using a teaspoon to form mini pancakes, optionally adding a small amount of coconut oil if frying

  3. Use a piping bag to form the batter into swirls if desired

  4. Cook each side until they turn golden-brown

  5. After making the mini pancakes, add bananas, chocolate, and yoghurt
