Nut-Chocolate Mousse Cake

Ingredients

  • 150g apple puree
  • 50g hazelnut butter (or other)
  • 150ml plant milk
  • 1tsp apple cider vinegar
  • 130g coconut blossum sugar/xylit/sugar
  • 80g ground hazelnuts
  • 200g regular spelt flour
  • 1/2 tsp baking soda
  • 2,5 tsp baking powder
  • 50g cacao powder
  • optional: flavedrops

Preparation

  1. Preheat the oven to 180°C/350°F upper and lower heat. Mix all ingredients. Pour the dough into 2 round, oiled baking forms (14cm). Bake for ~20-25 min. Let cool down

  2. In the meanwhile prepare the chocolate mousse. Ingredients: • 400 g silken tofu • 180 g melted chocolate (vegan) • a pinch of salt •1 tbsp hazelnut butterOptional: ~25 g coconut sugar/regular sugar ➡️ mix it all together until its smooth and put it in the fridge too cool down. When it's creamy, build the cake
