Nutilight Muffins
Ingredients
- 3 eggs
- 1 cup nutilight
- 1/3 cup coconut oil
- 1/2 teaspoon vanilla extract
- 1/4 cup granulated erythritol
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 3/4 cup coconut flour
- 3/4 cup almond flour
Preparation
Line a muffin pan with 12 liners and set aside—preheat oven to 350 degrees f
In a large bowl, whisk together eggs and erythritol until smooth
Add in nutilight, coconut oil, vanilla extract, and stir until well combined
Then add the coconut flour, almond flour, salt, baking powder, and stir until smooth
Fill prepared muffin cups with batter, about 3/4 of the way to the top
Bake 20-25 minutes or until a wooden skewer inserted into the center comes out clean
Let cool in the pan for 5-10 min, then remove and transfer to a cooling rack
