Pumpkin Spice Granola for Yogurt

Ingredients

  • 3/4 cup oats
  • 1/2 cup chopped nuts (I used walnuts and almonds)
  • 1/4 cup pumpkin seeds
  • 1/4 cup coconut
  • 1 mashed banana
  • 1/4 cup maple syrup
  • 2 tablespoons almond butter
  • 1 tablespoon coconut oil, melted
  • 1 teaspoon pumpkin pie spice
  • 1 teaspoon vanilla
  • pinch of salt

Preparation

  1. Mash the banana.

  2. Melt the coconut oil.

  3. Combine all ingredients in a bowl: oats, chopped nuts, pumpkin seeds, coconut, mashed banana, maple syrup, almond butter, melted coconut oil, pumpkin pie spice, vanilla, and salt.

  4. Spread the mixture evenly on a baking sheet.

  5. Bake at 350 degrees Fahrenheit for about 25 minutes or until golden brown.
