Quinoa Salad

Ingredients

  • 400gms asparagus chopped & sautéed in olive oil
  • 250gms cooked quinoa
  • 1 Mango - finely chopped
  • 300 gm punnet cherry tomatoes - halved
  • 1 ripe avocado - chopped
  • Handful of radishes - chopped
  • Handful of coriander - chopped
  • Juice of 1 large lime

Preparation

  1. Mix all the above together and eat straight away
