Quinoa Salad
Ingredients
- 400gms asparagus chopped & sautéed in olive oil
- 250gms cooked quinoa
- 1 Mango - finely chopped
- 300 gm punnet cherry tomatoes - halved
- 1 ripe avocado - chopped
- Handful of radishes - chopped
- Handful of coriander - chopped
- Juice of 1 large lime
Preparation
Mix all the above together and eat straight away
