Scrambled Tofu

Ingredients

  • 1/2 an onion
  • 1 garlic clove
  • 1/3 block of tofu
  • 4 cherry tomatoes
  • Handful of spinach
  • Turmeric
  • Curry powder
  • Cumin
  • Dash of soy sauce or tamari
  • Nutritional yeast (optional)
  • Olive oil
  • Fresh parsley

Preparation

  1. Add olive oil to the pan once it’s hot add the onion garlic and let it cook till onion is translucent, then add spices

  2. Once you smell the spices add the tomatoes

  3. Next crumble the tofu in the pan and cook

  4. Add the tamari, nutritional yeast and parsley

  5. After a few minutes add the spinach and cook until the spinach is wilted

  6. Serve with some toast and vegan butter or hummus/avocado is also good
