Sweet and Savory Brunch Waffle Recipes

Ingredients

Sweet waffle

  • 1 1/2 cup Oat Flour (GF certified)
  • 1 1/4 cup Almond Flour
  • 1 1/4 cup Almond or Soy Milk
  • 2-3 Tbsp Maple Syrup
  • 1 1/2 Tbsp Apple Cider Vinegar
  • 1 Tsp Vanilla Extract
  • 1 1/2 Tsp Baking Powder

Savory potato waffle

  • 2 Yukon potatoes
  • 1 flax egg
  • Salt & pepper to taste
  • 2 Tbsp vegan butter
  • Garlic powder to taste
  • Cayenne powder for spice (optional)

Preparation

Sweet waffle

  1. Preheat waffle iron. Pour soy or almond milk into a bowl along with apple cider vinegar and set aside.

  2. Add all your dry ingredients to a large mixing bowl. Mix well using a whisk.

  3. Add your milk/ACV mix to your dry ingredients. Add vanilla extract and maple syrup to the mix. Combine well using whisk.

  4. Grease/spray waffle iron and pour 1/2 cup of batter onto waffle iron at a time. Close and cook for 4-5 minutes or to your liking.

  5. Serve and top with toppings of choice.

Savory potato waffle

  1. Peel and shred your potatoes. Add them to a mixing bowl.

  2. Make your flax egg by mixing 1 Tbsp Flax Meal with 3 Tbsp water and allow to sit for a few minutes.

  3. Meanwhile season potato shreds and melt your vegan butter.

  4. Add flax egg to mixing bowl and combine/mix everything together.

  5. Turn waffle iron on high and brush butter on both sides. When it is hot enough add about 1/2 cup potato shred mix to waffle iron and close.

  6. Cook for 5 minutes on each side or more if you want it crispier. Serve along with scrambled tofu or Just Egg, and avocado for a savory brunch!
