Sweet Potato Vanilla Cakes with a Red Berry Coulis and Sliced Peaches

Ingredients

  • 2 prebaked japanese sweet potatoes
  • 1 pinch of vanilla powder
  • 2 cups of frozen mixed red berries
  • •2 cups of frozen mixed red berries

Preparation

  1. Peel the potatoes and kneed them until you get a dough (I used my hands)

  2. Mix in the vanilla powder

  3. The dough may be a bit wet but that doesn't matter

  4. Shape equal sized balls and form them into small patties

  5. Bake them at 180 °C for 25 min until they are golden brown

  6. Making the coulis is very easy

  7. I used a non sticking pot for convenience, because the berries do contain sugar, which can lead to nasty burns in your pot when you let it cook for too long ? Cook the berries until you get a puree

  8. You can cook them longer if you want to have a thicker puree, add water if you want it to be a little bit more liquid

  9. And now to sound fancy we switch up the word puree for coulis and we're good to go

  10. You can add date paste to your coulis, but to be honest the potato cakes are sticky & sweet and I find the sour & herb taste of the coulis perfect in combination with the cakes

  11. The fresh fruit lightens the dish and adds a small sweetness as well

  12. But you can see for yourselves what you prefer more
