Vegan Blueberry Smoothie Bowl

Ingredients

  • 1 frozen sliced banana
  • 1 cup frozen blueberries
  • 1 serving Bob's Red Mill pea protein
  • 1 cup oat milk (divided)
  • 1 teaspoon vanilla
  • 1 tablespoon chia seeds

Toppings

  • 1 tablespoon peanut butter
  • additional blueberries
  • toasted coconut flakes

Preparation

  1. Put the frozen banana slices into the blender and let sit for 10 minutes to get the chill off.

  2. Then add the rest of the ingredients, starting with just half a cup of milk and adding more as needed, and blend until smooth. You can use a food processor or any high speed blender but you might need to scrape the sides midway.

  3. Top with a tablespoon of peanut butter, more blueberries, and some toasted coconut flakes.
