Vegan “Egg” Sandwich

Ingredients

  • 1/4 cup chickpea flour
  • 1/4 cup + 1 tbsp water
  • salt; use black salt for extra eggy taste
  • pepper
  • garlic powder
  • tomato
  • red onion
  • vegan mayo @hellmannsmayonnaise is my fav
  • 1 avocado
  • 1/4 lemon juiced
  • evoo
  • sourdough bread

Preparation

  1. Mix flour and water to make egg, add salt, pepper, garlic powder to taste

  2. Add a lil evoo to pan, pour egg into pan and let it cook on low heat

  3. Once the top is cooked thru flip into a triangle

  4. Toast bread

  5. Mash avocado with salt, pepper, lemon juice and spread it onto toasted bread

  6. Spread vegan mayo onto the other side of bread

  7. Slice tomato and red onion and add to the sandwich
