Vegan Ham and Cheese Stuffed Broccoli Waffles
Ingredients
- 1/2 head broccoli
- 2/3 cup flour (chickpea flour used)
- 2/3 cup vegan unsweetened milk
- 1 tbsp nutritional yeast
- pinch of smoked paprika
- pinch of garlic powder
- 1/2 tsp baking powder
- Vegan cheese (sliced or grated)
- Vegan ham
Preparation
Chop and boil the broccoli until very soft, about 7 minutes.
Drain the broccoli and mash it with a potato masher.
Whisk together all the ingredients to form a smooth batter.
Preheat your waffle iron.
Pour batter into the waffle iron to fit the shape.
Close the iron and start cooking the waffles.
Halfway through cooking, open the iron; if the waffle breaks in half, add a slice of vegan cheese and some vegan ham, or cut it in half if necessary.
Close the iron again and continue cooking until golden.
Repeat with the remaining batter and serve with desired accompaniments.
