Vegan S’mores Cookie

Ingredients

  • 1 1/4 cup all purpose flour • 1/4 tsp salt • 1/4 tsp baking soda • 1/2 tsp baking powder • 2/3 cup coconut or cane sugar • 1/3 cup melted liquid coconut butter
  • 5 tbsp cup warm water • 1/3 cup, dairy-free chopped dark chocolate • 1/2 cup mini vegan marshmallows

Preparation

  1. Preheat your oven to 350*f

  2. Whisk together the flour + salt + baking soda + baking powder in a medium bowl and set aside

  3. In another bowl, mix together the sugar and melted oil, and then add in the warm water

  4. Add this wet mix to the dry mix and mix until combined

  5. Fold in your chocolate and marshmallows , and on two parchment lined trays, roll out your cookie dough balls and place on trays

  6. Make about 16 cookies and pop them into the oven for around 12 minutes

  7. Set cookies to cool before serving
