Vegan Biscoff Bourbon Brownies
Ingredients
- 200g dark chocolate
- 140g plain flour
- 200g caster sugar
- 20g cocoa powder
- 1 tsp baking powder
- 80ml vegetable oil
- 1 tsp vanilla extract
- 240ml soya milk
- 1/2 pack of Bourbon biscuits
- 2 tbsp Biscoff spread
Preparation
Preheat oven to 180°C fan and create a bain-marie by filling a small saucepan halfway with boiling water, placing it over low heat, and setting a clean heat-proof bowl on top without touching the water
Break up the chocolate into the bowl and let it melt slowly
While the chocolate is melting, sift together the flour, sugar, baking powder, and cocoa into a large mixing bowl and whisk to combine
Add the oil, milk, and vanilla to the dry mix and whisk until just combined
Pour in the melted chocolate and mix again until just combined, ensuring there is no dry mix around the sides or bottom of the bowl, then pour into your lined tin
Break up Bourbon biscuits and place them randomly on top
Melt Biscoff spread the same way you melted the chocolate, then drizzle it randomly over the batter and use a knife to swirl it around
Bake for 25-30 minutes or until a toothpick comes out clean
Let the brownie cool before cutting, then serve
