Biscoff Bourbon Brownies
Ingredients
- 200g dark chocolate
- 140g plain flour
- 200g caster sugar
- 20g cocoa powder
- 1tsp baking powder
- 80ml vegetable oil
- 1 tsp vanilla extract
- 240ml soya milk
- 1/2 pack of Bourbon biscuits
- 2 tbsp @lotusbiscoffuk Biscoff spread
Preparation
These brownies really are something special, bake them for your family and friends, they won't believe they are vegan
Start by pre heating oven 180’C Fan then creating a bain-marie by filling a small saucepan half way with boiling water and placing over a low heat, then placing a clean heat proof bowl on the saucepan, making sure the bottom isn't touching the water, then break up your chocolate into the bowl and let it melt slowly
Whilst the chocolate is melting, sift together the flour, sugar, baking powder and cocoa into a large mixing bowl and whisk to combine
Add the oil, milk and vanilla into the dry mix and whisk until just combined
Pour in the melted chocolate
Mix again until just combined making sure there is no dry mix around the sides or bottom of the bowl then pour into your lined tin
Break up Bourbon biscuits, place randomly on top, then melt Biscoff spread the same way you melted the chocolate then slodge randomly over batter and use and knife to swirl the Biscoff around
Bake for 25-30min or until a toothpick comes out clean! ?Let the brownie cool before cutting them, then serve
