Bread Pudding with Cashew Vanilla Sauce
Ingredients
- 1/2 cup coconut sugar
- 4 large room temp eggs
- 1 cup half and half or canned full fat coconut milk
- 2 tbsp melted butter or coconut oil
- 2 teaspoons vanilla extract
- 3/4 tsp cinnamon
- 8 slices crusty or stale bread
Preparation
Preheat oven to 350 and line an 11x8 or similar sized baking dish with parchment paper (I use binder clips to hold down)
In a large mixing bowl, whisk together all ingredients except bread
Dice bread into 1
Cubes and add to baking dish
Pour liquid on top and press until bread is evenly covered
Cover dish with aluminum foil and bake 40 mins, or until firm to touch
Enjoy immediately or cool and slice
For cashew vanilla sauce: combine 1/3 cup cashew butter, 1/3 cup hot water, 1 tbsp maple syrup and 3/4 tsp vanilla in a mixing bowl. Whisk until smooth and creamy. Add more water as desired for consistency
