Breakfast Protein Microwave Mugcake

Ingredients

  • 1/2 cup (40g) of oat flour (gf if needed)
  • 2 scoops (30g) of vegan protein powder of choice
  • 1 tsp baking powder (4g)
  • 1 tsp sugar or sweetener equivalent (4g)
  • 1/2 mashed banana or 2 tablespoons applesauce (24g)
  • dash of cinnamon and pinch of salt
  • around 1/4 cup of plant milk (60ml)
  • toppings of choice like peanut butter and chia jam

Preparation

  1. Mix the dry ingredients and add the wet, stirring so there are no clumps

  2. Add 3/4 of the mix to a bowl

  3. Then add about a tsp of peanut butter or a few choc chips in the centre

  4. Cover with the rest of the mix and microwave for about 3 mins

  5. Then check if it is solid or firm in the centre - continue for 2 more mins if you’d like it firmer or more cakey

  6. Top as you like, and enjoy the melt!
