Breakfast Protein Microwave Mugcake
Ingredients
- 1/2 cup (40g) of oat flour (gf if needed)
- 2 scoops (30g) of vegan protein powder of choice
- 1 tsp baking powder (4g)
- 1 tsp sugar or sweetener equivalent (4g)
- 1/2 mashed banana or 2 tablespoons applesauce (24g)
- dash of cinnamon and pinch of salt
- around 1/4 cup of plant milk (60ml)
- toppings of choice like peanut butter and chia jam
Preparation
Mix the dry ingredients and add the wet, stirring so there are no clumps
Add 3/4 of the mix to a bowl
Then add about a tsp of peanut butter or a few choc chips in the centre
Cover with the rest of the mix and microwave for about 3 mins
Then check if it is solid or firm in the centre - continue for 2 more mins if you’d like it firmer or more cakey
Top as you like, and enjoy the melt!
