Carrot Zucchini Cake
Ingredients
- 1 cup all purpose flour
- 3/4 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1tsp cinnamon
- 1/2 cup whole cane sugar
- 1/4 cup agave nectar or maple syrup
- 1/2 cup applesauce
- 1 cup grated carrot
- 1/2 cup grated zucchini (or more carrot)
- 1tsp vanilla extract
- 1tsp apple cinder vinegar
- 1/2 cup plant milk
Preparation
In a large bowl whisk together the flours, baking soda, baking powder, salt and cinnamon
Add in the rest of the ingredients except for the carrot and zucchini and mix until well combined
Fold in the zucchini and carrot and transfer the mixture to a baking pan and bake in a preheated oven at 350f for 25-40 minutes or until a toothpick inserted in the center comes out clean (depends on the size of the pan)
Let it cool before slicing
