Cheesecake Berry Bars

Ingredients

  • 1/2 cup oats
  • 1/2 cup almond flour
  • 1 cup dates
  • filling:
  • 1 1/2 cup cashews (soaked in very hot water for at least 1 hour, drained)
  • 1/3 cup melted coconut oil
  • 2/3 cup canned full fat coconut milk
  • juice of 1 lemon
  • 1/2 cup of sweetener of choice (honey, maple syrup, agave nectar, etc)
  • 1/2 cup strawberries
  • 1/2 cup blueberries

Preparation

  1. Make the crust: in a food processor or high-speed blender, pulse dates (remove pits) until a ball forms. Then, add the almond flour and oats and pulse until everything sticks together in a ball. Press into the bottom of a greased or lined 9x9 glass pan

  2. Make the filling: blend cashews, coconut oil, coconut milk, lemon juice, sweetener, and protein powder in your food processor until the mixture is smooth and well combined. Pour half of the mixture onto the crust and spread it evenly

  3. Make the swirl: Divide the remainder of the cashew mixture evenly into two. In food processor combine half of the mixture and strawberries. Once combined dollop onto the white mixture and swirl it in. repeat with blueberries

  4. Add full blueberries and strawberries on top. Freeze for 4-6 hours, and slice to serve. Store in the freezer
