Delicious Blueberry Vegan Donuts for Breakfast and Snacking
Ingredients
- Blueberries - 1/2 cup frozen or fresh
- Spelt flour - 2 cups
- Baking powder - 2 tsp
- Pinch of salt
- Almond flakes - 1/4 cup
- 1 1/3 cups soy milk or any plant-based milk
- Olive oil - 1/2 cup
- Vanilla extract - 2 tsp
- Apple cider - 1 tsp
- Maple syrup - 1/4 cup or any sugar you prefer
Preparation
Preheat the oven to 180C/350F, coat a 12-count donut pan with cooking spray and set aside.
In a bowl, add dry ingredients and sift well.
In another bowl, whisk wet ingredients well with a hand mixer.
Mix wet ingredients into dry ingredients and fold in blueberries and almond flakes, ensuring not to over mix.
Pour the batter into a ziplock bag, cut off a corner, and pipe into the donut pan. Alternatively, use a small spoon if you have steady hands.
Bake for 12-15 minutes or until a skewer comes out clean. Let cool completely before transferring to a wire rack.
