Delicious Blueberry Vegan Donuts for Breakfast and Snacking

Ingredients

  • Blueberries - 1/2 cup frozen or fresh
  • Spelt flour - 2 cups
  • Baking powder - 2 tsp
  • Pinch of salt
  • Almond flakes - 1/4 cup
  • 1 1/3 cups soy milk or any plant-based milk
  • Olive oil - 1/2 cup
  • Vanilla extract - 2 tsp
  • Apple cider - 1 tsp
  • Maple syrup - 1/4 cup or any sugar you prefer

Preparation

  1. Preheat the oven to 180C/350F, coat a 12-count donut pan with cooking spray and set aside.

  2. In a bowl, add dry ingredients and sift well.

  3. In another bowl, whisk wet ingredients well with a hand mixer.

  4. Mix wet ingredients into dry ingredients and fold in blueberries and almond flakes, ensuring not to over mix.

  5. Pour the batter into a ziplock bag, cut off a corner, and pipe into the donut pan. Alternatively, use a small spoon if you have steady hands.

  6. Bake for 12-15 minutes or until a skewer comes out clean. Let cool completely before transferring to a wire rack.
