Healthy Chocolate Beet Muffins with Orange

Ingredients

  • 1. In your food processor beat 100 g cooked beets
  • 100 g melted margarine
  • 65 g melted dark chocolate
  • 70 g raw cane sugar
  • 2 flax eggs (2 tbsp grounded flax seeds soaked in 4 tbsp water). 2. In a bowl add the beet mixture and sift 80 g spelt flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 pinch of salt. Add 35 g grounded almonds and some orange aroma OR zest of 1/2 orange. 3. Preheat oven to 160°C and fill the batter into your muffin tin. Makes about 6 - 8 muffins. Bake for 20 minutes. 4. For the frosting mix 250 g icing sugar
  • 75 g melted margarine
  • 2 tbsp plantbased milk and 2 tsp coffee powder. Let cool für 10 minutes
  • then add ontop of the muffins. Enjoy
