Lemon Polenta Biscuits

Ingredients

  • 100g unsalted butter
  • 150g self-raising flour
  • 50g polenta
  • 50g coconut sugar
  • 2 lemons

Preparation

  1. Preheat oven to 180C/fan 160C. Line a baking tray with greaseproof paper and rub with olive oil

  2. Cube the butter and add it to a food processor along with the flour, polenta and coconut sugar. Add the zest and juice from one lemon then pulse to combine everything together into a thick dough

  3. Divide the dough into 24 pieces and roll each piece into a ball. Place them on the baking tray and make a small indent in each ball using the back of a teaspoon

  4. Bake for 5 minutes, remove from the oven and grate the zest from another lemon over the biscuits. Put back in the oven for another 5 mins or until golden brown

  5. Remove from oven and allow to cool on a wire rack
