Morning Muffins

Ingredients

  • dry:
  • 1 1/2 cup of coconut flour
  • 3/4 cup pure cane sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 salt
  • dash of chia seeds (optional)
  • wet:
  • 2 ripened bananas-mashed
  • 3/4 cup non-dairy milk
  • 1/4 cup coconut oil
  • 2 tbsp vanilla extract

Preparation

  1. Throw in 1/2 cup of pecans or walnuts (I used pecans here)

  2. Put some crushed pecans on top too for texture - pop into the oven at 400 degrees for 22 minutes! Of course I paired it with peanut butter and much needed cold brew
