Quick and Easy Vegan Gluten-Free Chocolate Cookies
Ingredients
- 1/2 cup natural peanut butter
- 1/2 cup + 2 tbsp gluten-free oat flour
- 2 tbsp maple syrup
- A pinch of salt
Preparation
Make gluten-free oat flour by blending gluten-free oats into a fine flour if not using store-bought.
Mix all ingredients into a bowl.
Shape the mixture into balls and press down with a fork to create a criss-cross pattern.
Arrange on a baking sheet lined with parchment paper and refrigerate for 1 hour to set.
Optionally, dip them in dark melted chocolate for extra flavor.
