Quick and Easy Vegan Gluten-Free Chocolate Cookies

Ingredients

  • 1/2 cup natural peanut butter
  • 1/2 cup + 2 tbsp gluten-free oat flour
  • 2 tbsp maple syrup
  • A pinch of salt

Preparation

  1. Make gluten-free oat flour by blending gluten-free oats into a fine flour if not using store-bought.

  2. Mix all ingredients into a bowl.

  3. Shape the mixture into balls and press down with a fork to create a criss-cross pattern.

  4. Arrange on a baking sheet lined with parchment paper and refrigerate for 1 hour to set.

  5. Optionally, dip them in dark melted chocolate for extra flavor.
