Chocolate Peanut Butter Eggs
Ingredients
Filling
- 3/4 cup natural peanut butter
- 2 tbsp. almond flour
- 2 tbsp. maple syrup
- Pinch salt
Coating
- 2/3 cup vegan chocolate chips
- 1 tsp. coconut oil
Preparation
Mix the filling ingredients together in a bowl.
Take 1 tablespoon of filling and mold it into an egg shape.
Place the shaped eggs on a baking sheet lined with parchment paper.
Spray a little cooking spray on your hands to make molding easier.
Place the eggs in the freezer to chill for 30 minutes.
Melt the chocolate chips and coconut oil in a microwave or saucepan, using 30-second intervals and stirring until smooth, about 1.5 minutes total.
Dip the chilled eggs in the chocolate mixture using a spoon or fork, ensuring they are well coated.
Return the coated eggs to the baking sheet.
Place in the freezer for 10 minutes to set.
Optionally, add drizzle designs with white or dark chocolate and enjoy.

Store in the fridge or freezer once completed.
