Peanut Butter Cheesecake Bites
Ingredients
Base
- 115g oat flour
- 120g maple syrup
- 50g smooth peanut butter
Cheesecake
- 300g vegan cream cheese (can use coconut cream)
- 75g smooth peanut butter
- 40g maple syrup
Chocolate topping
- 100g dark vegan chocolate
- 1 tbsp coconut oil
Preparation
Mix the base ingredients together in a bowl until it forms a dough-like texture.
Divide the mixture across 6 cups in a mini cheesecake mould.
Mix the cheesecake ingredients together.
Divide the cheesecake mixture across the top of the bases.
Melt the chocolate and coconut oil together and top the cheesecakes.
Leave to set in the fridge for an hour.
Remove from the moulds and enjoy.
Notes
Peanut butter is loaded with nutrients including vitamin E, magnesium, iron, selenium, and vitamin B6.
Regular consumption of nuts and nut butter may reduce the risk of heart disease and type 2 diabetes.
