Easy Vegan Peanut Butter Cookies

Ingredients

  • 1 cup peanut butter (no added oil, no added sugar)
  • 3/4 cup oat flour
  • 1/4 cup maple syrup

Preparation

  1. Preheat oven to 180°C (350°F). Line a cookie sheet with parchment paper and set aside.

  2. In a medium-sized mixing bowl, add peanut butter and maple syrup.

  3. Combine with a spatula until it forms a creamy paste.

  4. Fold in the oat flour and stir until it forms a cookie dough ball.

  5. Divide the cookie dough into 12 pieces.

  6. Roll each piece into a ball between your hands.

  7. Place each ball on the prepared cookie sheet and flatten with a fork, forming a cross shape.

  8. Repeat until all cookies are shaped and leave space between each cookie, as they won't expand during baking and should not touch.

  9. Bake for 12-18 minutes or until the sides are golden brown. It may take 16 minutes for larger cookies or 12 minutes for smaller ones.

  10. Cool for 10 minutes on the cookie tray, then transfer to a cooling rack.

Tips

  1. Be patient; the cookies will get crunchier with time, and after 3 hours, they will achieve the most beautiful crunchy texture.
