Vegan Peanut Butter Chocolate Chip Cookies

Ingredients

  • 1 cup peanut butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla extract
  • 3/4 cup oat flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/4 cup vegan chocolate chips (optional)

Preparation

  1. Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper

  2. Mix peanut butter, maple syrup, and vanilla extract in a bowl until smooth

  3. Whisk together oat flour, salt, and baking powder in a separate bowl

  4. Combine the dry ingredients with the wet ingredients and mix until well incorporated

  5. Stir in vegan chocolate chips if using

  6. Roll tablespoon-sized portions of dough into balls and place on the baking sheet

  7. Flatten each ball with a fork in a criss-cross pattern

  8. Bake for 10 to 12 minutes until the edges are set

  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack
