Vegan Peanut Butter Chocolate Chip Cookies
Ingredients
- 1 cup peanut butter
- 1/2 cup maple syrup
- 1 teaspoon vanilla extract
- 3/4 cup oat flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/4 cup vegan chocolate chips (optional)
Preparation
Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper
Mix peanut butter, maple syrup, and vanilla extract in a bowl until smooth
Whisk together oat flour, salt, and baking powder in a separate bowl
Combine the dry ingredients with the wet ingredients and mix until well incorporated
Stir in vegan chocolate chips if using
Roll tablespoon-sized portions of dough into balls and place on the baking sheet
Flatten each ball with a fork in a criss-cross pattern
Bake for 10 to 12 minutes until the edges are set
Cool on the baking sheet for 5 minutes before transferring to a wire rack
