Raw Snickers Cups

Ingredients

  • for chocolate coating:
  • 50g dark chocolate (x2)
  • 1 1/2 tsp coconut oil (x2)
  • for the ‘nougat’ layer:
  • 1/3 cup almond meal
  • 1/3 cup oat flour ▪️50g dates (soaked in warm water)
  • for the caramel layer:
  • 75g dates (soaked in warm water)
  • 2 tbs peanut butter ▪️1/2 cup coco pops*
  • peanuts (however many you’d like to top with)

Preparation

  1. Melt first lot of chocolate and coconut oil together

  2. Pour into patty pans and bring slightly up on the sides

  3. Set aside in the freezer to set

  4. For the nougat, mix soaked dates in a blender with almond meal and oat flour

  5. Scoop on to set chocolate and smooth evenly

  6. Put back in the freezer

  7. Prepare caramel by mixing dates and peanut butter in a blender

  8. Stir in the coco pops

  9. Scoop on top of nougat

  10. Top with peanuts and press slightly so they sink into caramel

  11. Put back in the freezer

  12. Melt together other set of chocolate and coconut oil and pour over the top

  13. The chocolate should set pretty much straight away

  14. Store in the fridge for 5 days or the freezer for much longer!
