Raw Vegan Avocado Lime Pie
Ingredients
- crust
- 12 dates (pits removed, soak in hot water 10min)
- 1 tsp cinnamon
- 1 cup unsalted macadamia nuts
- 1 cup unsalted cashews
- 1 tsp vanilla
- 1/2 cup shredded coconut
- 1/4 cup melted coconut oil
- pie filling
- 1/2 can (200ml) coconut milk, full fat
- 2 avocados
- 1/2 cup maple syrup
- 1/3 cup lime juice
- 3/4 cup melted coconut oil
- 1 tsp vanilla
- 2 handfuls of spinach (add more if desired)
- zest from 2 limes
Preparation
Grease 8 inch pie pan and place baking paper on the bottom
Combine crust ingredients in a food processor
Press into pan, allow to chill in fridge while you make the filling
Add all filling ingredients into food processor, blend until smooth
May take a few minutes to grind up
Pour over chilled crust
Set in fridge to firm up for 1hr to 2hrs
