Rosemary Gladstar’s Elderberry Syrup
Ingredients
- 4 cups ripe elderberries
- 2 tablespoons water
- fresh ginger
- 2 cinnamon sticks
- honey
Preparation
Rinse the elderberries thoroughly and de-stem. Combine the berries and water in a large pot and simmer on low until berries are soft
Strain out the pulp and any loose stems
Add in grated ginger, cinnamon sticks, and simmer until liquid is reduced by half
Remove cinnamon sticks and add same amount of honey as there is liquid
Allow liquid to cool before putting it in jars. Refrigerate and and take a spoonful a day to kick a cold
