Vegan Chocolate Chip Muffins

Ingredients

  • 280 g of all purpose flour
  • 200 g of sugar
  • 3 tsp of baking powder
  • 1/2 tsp of salt
  • 240 ml of vegan buttermilk
  • a small pinch of vanilla powder
  • 120 ml of sunflower oil
  • 260 g of dairy free chocolate chips

Preparation

  1. Preheat your oven to 180 degrees Celsius

  2. For the vegan buttermilk, mix 230 ml of plant milk (I used soy) with the juice of 1/2 a lemon an let it sit for 5 min

  3. Mix the flour with the sugar, baking powder, salt and vanilla powder in a bowl. Add the buttermilk and the oil and mix well. Be careful not to overmix the dough. Lastly, add the chocolate chips

  4. Pour the dough evenly into your muffin tray and bake the muffins for 30 min. Check with a toothpick to make sure your muffins are done

  5. Let the muffins cool for at least 10 min before digging into them (I know, very hard to do ?) But unfortunately you can burn yourself or get stomachs aches if you eat warm cakes. And the muffins break easy when they are warm. So it's best to be patient here
