Vegan Chocolate Mug Cake

Ingredients

  • 1/4 c plain flour
  • 3 tbs sugar or coconut sugar
  • 2 tbs light fruity extra virgin olive oil
  • 1 tsp baking powder
  • 2 tbs pure cocoa powder
  • 4 tbs rice milk or any of your choice
  • Pinch of salt
  • 2 rows Salted Caramel Dark Chocolate

Preparation

  1. In a bowl mix flour, baking powder, sugar, and salt.

  2. Add olive oil and milk to dry ingredients and mix well to combine.

  3. Transfer half of the cake mixture to a mug, then add a pile of chocolate chunks in the middle of the mixture and top with the rest of the cake mixture.

  4. Cook in the microwave for 60 seconds.

  5. Serve with a scoop of ice cream or a dollop of thick cream.
