Vegan Chocolate Mug Cake
Ingredients
- 1/4 c plain flour
- 3 tbs sugar or coconut sugar
- 2 tbs light fruity extra virgin olive oil
- 1 tsp baking powder
- 2 tbs pure cocoa powder
- 4 tbs rice milk or any of your choice
- Pinch of salt
- 2 rows Salted Caramel Dark Chocolate
Preparation
In a bowl mix flour, baking powder, sugar, and salt.
Add olive oil and milk to dry ingredients and mix well to combine.
Transfer half of the cake mixture to a mug, then add a pile of chocolate chunks in the middle of the mixture and top with the rest of the cake mixture.
Cook in the microwave for 60 seconds.
Serve with a scoop of ice cream or a dollop of thick cream.
