Vegan Raw Cherry Cheesecake

Ingredients

Crust

  • 1/4 cup medjool dates
  • 1/4 cup walnuts
  • 1/4 cup almonds
  • Vanilla paste and a bit of maple syrup (optional)

Cherry-strawberry layer

  • 1 cup soaked cashews
  • 3/4 cup frozen cherries
  • 2 strawberries
  • 1 tbsp maple syrup
  • 3 tbsp coconut milk

Chocolate layer

  • 1/2 cup soaked cashews
  • 1 frozen banana
  • 1 tbsp cacao powder
  • 1 tsp maple syrup
  • 1-2 tbsp coconut milk

Banana cashew berry cream

  • 1/2 cup soaked cashews
  • 1 large frozen banana
  • 1 tbsp maple syrup
  • 1-2 tbsp coconut milk
  • A few red berries (strawberries, raspberries, cherries) for colour

Preparation

  1. Add crust ingredients to a food processor and process until sticky and well combined

  2. Split the mixture in half and press into the bottoms of two greased or parchment-lined 4-inch spring cake tins. Freeze while preparing the cheesecake

  3. Add the cherry-strawberry layer ingredients in a blender and blend until smooth. Transfer the mixture onto the crust in the cake tins. Freeze again

  4. Do the same thing with the chocolate layer. Pour on top of the cherry-strawberry layer and freeze for 2-4 hours

  5. Before serving, make the banana cashew berry cream layer by blending the ingredients until smooth and adding the mixture to the top of the cakes
