Vegan Weetabix Banana and Blueberry Scones

Ingredients

  • 300g self raising flour⁣⁣
  • 2 weetabix⁣⁣
  • 2 bananas ⁣⁣
  • 150ml plant milk ⁣⁣
  • 1tsp baking powder ⁣⁣
  • 3tbsp caster sugar ⁣⁣
  • pinch of salt ⁣⁣
  • preheat oven ⁣⁣

Preparation

  1. Mix together the flour, baking powder, sugar and salt in a bowl. Slowly rub in the vegan butter until the mix resembles bread crumbs. ⁣⁣

  2. Finely crumble the weetabix into the flour mix until fully combined. ⁣⁣

  3. Mash bananas with a fork in second bowl and continue to add to flour mix. ⁣⁣

  4. Gradually stir the milk into the flour until it forms a smooth dough. ⁣⁣

  5. Evenly fill a greased muffin pan with the mixture ⁣⁣

  6. Proceed to bake for 15-20 minutes until golden brown. ⁣⁣
