Vegan Weetabix Banana and Blueberry Scones
Ingredients
- 300g self raising flour
- 2 weetabix
- 2 bananas
- 150ml plant milk
- 1tsp baking powder
- 3tbsp caster sugar
- pinch of salt
- preheat oven
Preparation
Mix together the flour, baking powder, sugar and salt in a bowl. Slowly rub in the vegan butter until the mix resembles bread crumbs.
Finely crumble the weetabix into the flour mix until fully combined.
Mash bananas with a fork in second bowl and continue to add to flour mix.
Gradually stir the milk into the flour until it forms a smooth dough.
Evenly fill a greased muffin pan with the mixture
Proceed to bake for 15-20 minutes until golden brown.
