Whole Wheat Apple Hand Pies

Ingredients

  • 3 medium-sized apples, peeled and diced, with a squeeze of lemon
  • 2 tablespoons ghee or unsalted butter
  • 1/4 cup pure maple syrup
  • 1.5 teaspoons cinnamon
  • 1 teaspoon nutmeg
  • 1/2 teaspoon cardamom
  • 1 teaspoon vanilla
  • 1 pack of Wholly Wholesome whole wheat pie dough (2, 9-inch rounds)
  • 1 egg, beaten

Preparation

  1. Prepare the dough according to package instructions, thawing if frozen.

  2. Melt ghee or butter in a large pan.

  3. Add apples, syrup, spices and vanilla to the pan and mix to combine.

  4. Let cook for 5 minutes over medium heat, stirring occasionally, until apples have a bite and are not mushy.

  5. Let cool for 30 minutes.

  6. Meanwhile, preheat oven to 375°F, line a baking sheet with parchment paper, and prepare the pie crusts.

  7. Unroll the dough on a board dusted with flour.

  8. Dust a rolling pin with flour and roll the dough so it is slightly thinner.

  9. Cut out an even amount of circles using a glass or cutter at least 3.5 inches wide, re-rolling dough to get about 20 circles.

  10. If circles seem warm, place in the fridge for 20 minutes to chill.

  11. Once apples have cooled and circles are prepared, spoon a small amount of mixture on top of one circle, leaving a small border uncovered.

  12. Top with another circle, seal the edges together and crimp with a fork.

  13. Complete the rest of the pies and then cut two slits on top of each pie.

  14. Brush the top of each pie with the egg wash.

  15. Bake for about 25 minutes or until golden brown.
