4 Ingredient Leek & Potato Soup

Ingredients

  • 3 leeks
  • 3 yukon gold potatoes
  • oil and salt/pepper or seasoning of choice like thyme

Preparation

  1. Cut up potatoes and leeks in slices and boil and toss in olive oil for 3-5 minutes then add 3 cups of water and let it simmer for 15-20 minutes • add in salt, pepper or your voice of seasoning like herbamare or stock • stir through and let it cook for another 5-10 minutes • either by hand stick or mixer blitz the soup until super creamy and clear • serve with garlic toast or garlic croutons • ENJOY
