5-ingredient curry

Ingredients

  • 2 tins of anything - chickpeas, kidney beans, lentils, sweetcorn, butter beans etc
  • 1 onion
  • tomatoes - tinned, fresh, purée
  • garlic
  • curry powder

Preparation

  1. Finely chop and add the onion in a little oil on a medium heat until it’s soft and brown, burning on the edges is ok.... this will all melt into your sauce and add a delicious smokey flavour

  2. Mince/finely grate & add the garlic & ginger to the onion and stir for a minute

  3. Add your tin of chick peas & tomatoes. (If using purée or fresh, add 1/2 a pint of water too)

  4. Add 2 teaspoons curry power & salt to taste

  5. Simmer for about 20 minutes on a low heat with the lid on. Stir every 5 minutes and add a little water to adjust the consistency as required. Serve with rice, quinoa, bread, flat breads, pitta - anything goes
