Ingredients

  • *️⃣1-2 avocado, chopped
  • *️⃣1 sweet onion, chopped
  • *️⃣1 cucumber, sliced
  • *️⃣Pepita Pesto

Preparation

  1. Add 1 cup pepitas & 2 cloves garlic to a food processor to break down

  2. Add 2-3 hand fills of whatever greens you have on hand and pulse to combine until chopped

  3. Drizzle @kasandrinos olive oil in the shoot with the blade running until desired consistency

  4. Season with sea salt to taste and pulse to combine

  5. Toss everything together in a bowl until the zucchini is mixed
