Avocado Brussels Sprouts Fried Rice

Ingredients

  • 1 tablespoon sesame oil⁣
  • 1 large garlic clove, minced⁣
  • 1/3 cup chopped onion⁣
  • 2 cups shredded brussels sprouts⁣
  • 1/4 cup vegetable broth⁣
  • 2 cups cooked brown rice⁣
  • 2 large eggs⁣
  • 1 large avocado (or 2 smaller avocados), peeled, pitted, and small chopped⁣
  • pepper⁣
  • red pepper flakes⁣
  • 2 tablespoons low sodium soy sauce⁣

Preparation

  1. Heat the oil in a large skillet over medium-high heat

  2. Once oil is shimmering, add the garlic and onion and cook for 5 minutes or until onions soften and are translucent

  3. Add the brussels sprouts and cook, stirring frequently, for 5 minutes

  4. Add vegetable broth, stir, and let cook for another 5 minutes, stirring every minute

  5. Add the cooked rice, stir well to combine, and creative a cavity in the center of the rice mixture

  6. Crack in the eggs and stir until scrambled

  7. Combine the rice with the scrambled eggs and mix well

  8. Add avocado, pepper, red pepper flakes, and soy sauce and stir well to combine
