Baked Easter Carrots
Ingredients
- 14 carrots
- 3tb agave syrup
- 5tb olive oil
- 300g plantbased not sweetend yogurt
- 2 handful fresh cilantro
- 1 handful fresh parsley
- 2 handful fresh basil
- salt, pepper
- rasped zest of 1 lemon
- 2tb sesame seeds
Preparation
Preheat the oven to 175 degrees circulating air
Mix oil and agave syrup
Peel the carrots
Slice lengthwise in fourth
Mix with the oil and agave mix
Add on top of a baking tray with baking paper
Bake for about 10 minutes
Flip around
Bake another 10 minutes
Puree all the other ingredients together
In a pan without oil fry the sesame seeds for about one minute
Add a bit of sauce on both plates, top with carrots
Finish with more sauce, sesame seeds and some more chopped herbs or salad leaves
