Baked Tempura Veggie Bites

Ingredients

  • 300g mixed veg
  • 250ml of aquafaba (chickpea water)
  • 200g desiccated coconut
  • 100g almond flour
  • 100g fine bread crumbs
  • salt & pepper

Preparation

  1. Pre heat the oven to 190c

  2. Prep the veg by cutting it into bite sized pieces

  3. Mix together coconut, flour & breadcrumbs adding salt & pepper to taste

  4. Have aquafaba in a bowl ready & have a baking tray ready

  5. Dip the veg in the auquafaba & then roll in the flour, coconut etc mixture

  6. Pop on a baking tray & bake for 20-25 mins, turning half way

  7. Mix all the sauce ingredients together & serve with the hot crispy crunchy veg & enjoy

  13. For the sauce: 1 chilli, 4 tbsp soy sauce, 2 tbsp rice wine vinegar, 1 tbsp sesame seeds.

  14. Mix all the sauce ingredients together & serve with the hot crispy crunchy veg & enjoy
